Ingredients: Karuppu Ulundhu Kali Mix, water, karupatti or jaggery, gingelly oil, cardamom
Method: Melt karupatti in water and strain. Bring it to a boil, then add the Karuppu Ulundhu Kali Mix slowly while stirring continuously to avoid lumps. Keep stirring on a low flame, adding gingelly oil little by little, until it comes together as a glossy kali. Serve warm.

Ingredients: Karuppu Ulundhu Kali Mix, water, milk, palm jaggery, dry ginger, salt
Method: Whisk 3 tbsp of the mix into 1½ cups water with no lumps. Cook on medium flame, stirring, until it thickens into a porridge. Sweeten with palm jaggery and a pinch of dry ginger, or keep it savoury with a little salt and milk.

Method: Boil water with salt, crushed garlic and curry leaves. Add the mix slowly while stirring, drizzling gingelly oil until it thickens and leaves the sides of the pan. Serve hot with mor milagai or a spoon of extra gingelly oil.
